Chef Christophe Vicente Madeleine Batter for Vanilla Madeleines or Blueberry Muffins
  • 4 and 1/3 cups flour
  • 1 and ½ cups caster sugar
  • ½ cup PROVA vanilla sugar
  • 1 and ½ tablespoons baking powder
  • 9 large eggs stiffly beaten
  • 1 and ½ cups or 3 sticks unsalted butter melted

Combine the powdered ingredients together (flour, caster sugar, vanilla sugar, baking powder) in the mixer's bowl. Mix at medium speed. Add the eggs, then the melted butter, or brown butter to give the madeleine batter its specific taste.
